Description

This is quite a rare cut.

It takes a skilled butcher to extract this fillet and there are only two per cow. Shoulder fillet comes from the Chuck and is about the same size as a Pork fillet. Sometimes it's called the “poor man's Fillet steak”.

And it's very, very similar to Fillet steak. 

It's the same shape, but smaller, same flavour and almost as tender. The only real difference is that it has less fat and marbling. But, when cooked properly, it slices like butter.

It doesn’t need marinades or rubs– all it needs is a quick rub with some salt – and then serve it Medium-rare.
