There's two ways to enjoy marrow bones. Boil them up with vegetables to make a healthy, nutritious, broth. Or roast the marrow bones in an oven, then scoop out the marrow and use it like butter.
Roasted, it's rich and creamy with a slightly sweet, nutty, taste. Which makes it good to spread over toast, melt over a cooked steak or simply eat by the spoonful. Just remember, Beef marrow is 97% fat – albeit healthy fat.
As a stock – or broth – Beef marrow's been rediscovered as a “health” food. Along with all sorts of claims.
It's certainly delicious. But the jury's out on whether it's a health-superfood or not.
Be that as it may. What we know, for sure, is that if marrow bones are cooked with vegetables it increases the content of some important nutrients: potassium, calcium, magnesium and iron.
The long and the short of it is: Marrow is tasty... it's versatile... and it's certainly got some health benefits. But it's up to you to decide if it's a magic potion, or not.
