Description

Chuck short ribs come from under the Chuck towards the front of the cow. They’re a bit shorter than the other beef ribs at about 3-6 inches long. 

But they've got more meat on them than Plate ribs and are less fatty. Although they're not quite as tender.  

When it comes to taste they come with enough fat to keep the meat nice and moist if roasted. And enough collagen to make a rich smooth gravy if you braise them. They also grill well which makes them good for BBQs and eating off the bone.
