Description
A Jacobs ladder makes for a cross between comfort food and an indulgent treat.
This is a chunky slab of ribs, rather like a thicker, meatier, version of Pork spare ribs but made from beef.
This Jacobs ladder comes from the Chuck, which is considered to have a better flavour than the alternative Plate short ribs.
Chuck ribs come from the shoulder. So there's plenty of richly marbled beef on the bones and plenty of good old Chuck flavour.
But, importantly, there's less collagen in these ribs which makes them a bit more tender and quicker to cook – so they're suitable for more than just braising. You can grill or BBQ these ones as well.
Plan on 2 ribs per person.
