Jacobs ladder's got plenty of meat on the bones, with the rich marbling of Ribeye and a good beefy flavour running through it.
This Jacobs ladder comes from Plate ribs which are considered to be the premium ribs. They sit just below the Ribeye, so they're leaner and meatier than ribs from the Chuck. And, because they've got a much higher collagen content, they're ideally suited to braising.
