Description
This is a hidden gem.
There are only two of these on a cow and each one is a single portion (220g).
Each steak is a little semicircle of meat. It's woven with marbling that resembles a spider's web... hence the name. It also looks a bit like an oyster which is why some people call it Oyster steak.
It may not be big but it's got plenty of flavour and is delicately tender.
Texture-wise it's a cross between Fillet and Flank. Taste-wise it's nicely balanced. Tasty – but not too beefy.
